Skillet Cornbread
Ingredients
½ cup all purpose-flour
¼ cup grated bread crumbs
1 ½ cups white corn meal
1 teaspoon salt or substitute
2 ½ teaspoons baking powder
½ cup Eggbeaters
1 ½ cups skim milk
2 tablespoons vegetable oil
Method
Preheat oven to 400 degrees. Combine flour, bread crumbs, corn meal, salt, and baking powder. Combine Eggbeaters and milk in separate bowl. Stir egg mixture into corn meal mixture, mixing well. Place oil into 10-inch iron skillet, then place in preheated oven until oil is hot. Coat sides of skillet. Spoon mixture into hot skillet. Bake 25 minutes or until golden brown at 400 degrees. Cut cornbread into 9 pie-shaped portions.
