Cornbread Dressing

Ingredients

1 cup chopped onion
1 cup chopped celery
¼ cup margarine
1 ½ cups chicken broth (defatted)
5 cups crumbled cornbread
1 teaspoon salt
½ cup Eggbeaters
½ teaspoon pepper
1 teaspoon sage, if desired

Method

Preheat oven to 350 degrees. Sauté onion and celery in margarine until tender. Combine cornbread, salt and eggs. Mix in onion and celery. Add broth and remaining seasonings desired. Blend well and place in casserole dish sprayed with a nonstick vegetable spray. Bake at 350 degrees for 30-40 minutes.

Yield: 8 1-cup servings
