Grape Tomato and Parmesan Salad

Fresh Greens with a tangy dressing are always a tempting especially when it’s hot outside.

Dressing

2 Tbsp yogurt
2 teaspoons Mayonnaise
1 tsp lemon juice
1 tsp Dijon mustard
1 clove garlic, chopped

Salad

1/3 cup Parmesan shredded
8 oz package grape tomatoes
8 slices baguette, cut in half lengthwise, toasted with olive oil
2 heads Romaine lettuce, sliced lengthwise

Method

Combine yogurt, teaspoons mayonnaise, mustard, lemon juice and garlic together in a small bowl and set aside. In a large bowl combine parmesan, romaine, tomatoes and add dressing, tossing to coat.  Divide salad among four plates and garnish with toast points.
