Fresh Pineapple with Mango Sorbet

Ingredients

8 thin slices of pineapple, core removed
1 pt store bought mango sorbet
¼ cup mint leaves, washed, chopped
¼ cup sugar

Method

Place sugar and mint in a food processor and blend until well combined.  Set aside.  To serve place a slice of pineapple in the middle of a small plate and top with two small scoops mango sorbet.  Add the other slice on top and sprinkle the plate with the mint sugar.
