Whole Wheat Banana Bread

Ingredients

¼ cup all-purpose flour
½ cup whole wheat flour
1 teaspoon baking soda
¼ teaspoon salt
½ cup sugar
¼ cup vegetable oil
1 egg*
1 cup mashed ripe banana (about 2 medium)
1 teaspoon vanilla extract
Vegetable cooking spray

Method

Combine first four ingredients in a small bowl, stir well and set aside. Combine sugar and oil in a medium bowl and beat at medium speed of an electric mixer 2 minutes or until well blended. Add egg and beat until light and lemon colored.

With mixer running at a low speed, add flour mixture alternately with bananas, beginning and ending with flour mixture. Blend well after each addition. Stir in vanilla. Pour batter into an 8 x 4 x 2-inch loaf pan coated with cooking spray, bake at 350 degrees for 45 minutes or until a wooden toothpick inserted in center comes out clean. Cool 15 minutes in pan on a wire rack; remove from pan and let cool completely on wire rack.

Yield: 16 (1/2 inch slices)

*May substitute eggbeaters to reduce cholesterol.
