Sugarless Banana Muffins
Ingredients
¼ cup vegetable oil
1 tablespoon Sweet & Low brown sugar
1 cup all-purpose flour
2 tablespoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
1 cup low-fat buttermilk
¼ cup Eggbeaters
1/3 cup oat bran
1/3 cup oatmeal
1/3 cup wheat germ
1 large ripe banana (mashed)
Method
In a mixing bowl, combine vegetable oil, brown sugar, flour, baking powder, baking soda, and salt. Add buttermilk, Eggbeaters, oat bran, oatmeal, and wheat germ. Stir lightly with a wooden spoon to moisten. Stir in banana. Fill paper-lined muffin tins or spray tins with nonstick vegetable spray filling ¾ full. Bake at 400 degrees 20 minutes or until toothpick inserted into center comes out dry. Remove muffins from tins and cool on wire rack. These muffins freeze well.
Variation: Substitute blueberries or applesauce for bananas.
Yield: 18 muffins
